Dough Ingredients:
Flour, water, a little bit of salt

Filling Ingredients:
a lot of cheese (white, crumbly, mild), maybe 7-8 cups
10 eggs
dill
green onions

Topping:
2-3 eggs

Mix dough ingredients. Brush oil on a clean, solid surface and knead the dough. Cut dough into small balls, about 2 inches in diameter. Roll into balls. Let rest for 15-20 minutes.

Mix filling together.

Roll out 3 balls of dough in 3 long strips. Let rest for 5 minutes. Work one strip into a very thin circle. Spoon filling onto bottom 1/3 of dough. Starting from the bottom, with palm side of hands facing the table roll the dough up with the tops of fingers, allowing air between the layers as it is rolled. (There should be visible air pockets.) Place on greased cookie sheet. Roll out another long strip of dough and let rest 5 minutes while working on the other dough already rolled in a long strip on the table. Repeat these steps until all ingredients have been used and cookie sheets are full.

Mix a couple of eggs together and brush the top of the dough.

Bake in a hot over for 25-30 minutes. Should be lightly brown and flaking when done.
